Three main meals with produce straight from the garden

Tomato Basil Soup

This can be eaten as a meal by itself or as a side to meaty dishes, pizza, or pasta.

Combine a cup of seeded and diced bell pepper and a cup of finely diced tomatoes. To this, add ¼ finely diced onion; 2 tablespoon of finely chopped basil and parsley. Season with salt and a teaspoon of olive oil.

In a big stock pot, add oil and heat it over medium heat. Add one yellow onion diced, a large carrot and a stalk of celery cut into slices. Cook everything until all the veggies are tender and soft. Add 4 cloves of garlic and continue to cook for a minute. Add 5 pounds of fresh ripe tomatoes. Add a big handful of basil leaves. Season with salt and pepper. Cook for another 20 minutes on low heat. Serve hot.

You don’t have to have a big garden to grow enough produce for your meals. You can grow herbs and vegetables and there are always recipes available. Your small garden and still give you what you need to make some delicious meals at home. Even if it produces just enough to make you a salad, then all the hard work that you did will be worth it.

Okra

Combine 2 tbps. of cooking oil, five basil leaves tied together, 2 crushed cloves of garlic, 1.5 cups of sliced red onion and salt. Cook all this on medium heat for 40 minutes. The aim is to caramelize the onions. Stir occasionally. Once caramelized, add 3 cups of bite-sized okra and ¼ tsp. of salt. Let it cook on medium heat for about 7 minutes. Add a teaspoon of vinegar and scrape the pan. Remove the basil bundle and garlic. Let it cool and serve with topped fresh basil leaves

Tomato salad

Cut up any vegetable except potatoes from your garden in a bowl of sliced or diced ripe tomatoes. Toss together with any favourite dressing – lo-cal preferably.
